Monday Morning Video - All I've Ever Needed

So I added the Breaking Dawn Part 2 Official soundtrack to my collection last week and I am totally smitten with this song!
I am a complete sucker when it comes to things like this! I love the amount of love that is in this song - and it has jumped to one of the most played on my ipod!
The video makes me love it even more! 

I am also SO excited that I am going to see Breaking Dawn on Wednesday - 2 more days! I was so tempted to see it over the weekend but I spent hours in the library instead! It'll be worth it in the end though (said through gritted teeth!).
I had to settle for watched Breaking Dawn part 1. Again. And the extra features.
 I so nearly broke out all the other films but I showed an ounce of restraint!


I am also excited that I have started making some Christmas presents and bits this weekend.
Where do you stand on this? Is it too early for Christmas things? Or are you ready to get organised for the holiday season?
Will you judge me if I play my Christmas playlist? Just once?

Its a Wrap Wednesday - Italian Wrap


Sorry for the lack of recipe last week, I had only just returned from London and didn't have time to put one up! No worries though...I am back this week with a yummy Italian wrap to offer you. Full of gutsy Italian flavours, this is a speedy wrap that is perfect for your lunch box!







 Italian Wrap

Ingredients
1 tortilla wrap
1 handful of your favourite salad leaves
3 sun dried tomatoes, sliced
1 tomato, chopped
2 tsp green pesto

1. Spread pesto all over your wrap
2. Scatter all other ingredients on top
3. Wrap up and enjoy!

Its a Wrap Wednesday - Wrap Salad Basket


This week's Its a Wrap is a simple twist on the simple salad - make a basket of a wrap simply by moulding a wrap into an ovenproof bowl and cook at 180C for 15-20 minutes until browned - will crunch up more after a few minutes out of the oven

Then fill with your favourite green salad and a yummy topping like tuna mayo and sweetcorn!

Its a Wrap Wednesday - Cheesy Beans Wrap



Do you have a comfort food? A quick, easy, warming meal that is all you fancy when you get home late or are too tired to cook properly? One of mine has to be baked beans...on toast or on a jacket potato...with melted cheese..mmmmmm.

Anyway, this wrap takes this yummy comfort meal and turns it into a comforting and cosy lunch - and its so easy!


Baked Beans Wrap
Ingredients
serves 1

1 tortilla wrap
1/2 tin Heinz Baked Beans
25g grated cheese (I use Red Leicester)

1. Put beans in the middle of the wrap. Top with cheese.
2. Wrap up like a parcel and place fold sides down on a baking tray
3. Bake at 180C for 15-20 minutes until browned and crispy
4. Enjoy!

Its a Wrap Wednesday - Cinnamon Chips with Fruit Salad



This Wednesday's recipe is a different to use your wrap so it is yummy and refreshing on a summer's day - not that we've seen many of those recently though - I made these a lot during revision periods!



Fruit Salad
serves 1
1 apple
1 banana
1 nectarine
10 blueberries
1/2 tbsp vanilla yogurt
2 tbsp apple juice

1. Chop fruit into bite size pieces
2. In a bowl mix yogurt and apple juice
3. Add fruit and stir to coat

NB - of course you can use whatever fruit you like - I tend to look at offers for whats in season!

Cinnamon Chips
adapted from six sisters stuff
serves 1
1 tortilla wrap
1 tbsp butter
4 tsp sugar
1 tsp cinnamon


1. Melt butter and brush over tortilla wrap
2. Combine sugar and cinnamon, scatter over the tortilla
3. Cut tortilla into chip shapes (carefully to make sure your don't get sugar on the reverse side of the chips)
4. Bake chips at 180C for 6-7 minutes until browned - don't worry if they are not crispy yet, after a couple of minutes on the side they will be!
5. Enjoy with fruit salad

Its a Wrap Wednesday - Ploughman's Wrap



This is one of my favourite wrap recipes - a twist on the ploughman's lunch! You could add ham if you wanted as well!

Ploughman's Wrap






Ingredients
1 Tortilla Wrap
2 cherry tomatoes
1/2 apple, thinly sliced (braeburn works well)
Handful of salad leaves
30g grated cheese
1 tbsp Branston Pickle

1. Spread pickle over your wrap
2. Top with apple, tomatoes and salad leaves
3. Sprinkle with cheese
4. Fold up wrap
5. Enjoy!

Its a Wrap Wednesday - Nacho Salad




Welcome back to Its a Wrap Wednesday! This week's recipe is a different way of using wraps. It can't be done as a packed lunch but is a great treat for when you are having lunch at home!




Nacho Salad
(adapted from Jamie Oliver's Mad Dog Salad)
serves 1


Ingredients
1 Tortilla Wrap
3 Cherry tomatoes
1/2 tbsp sunflower seeds
1/4-1/2 lemon
Olive Oil
Handful of salad leaves
25g grated cheese (I used red Leicester)


1. Turn your oven on to 180C
2. Half your tomatoes, place on a baking sheet in the oven
3. Cut your wrap into tortilla chip size and shape pieces

4. Spread out over a baking sheet and bake for 7-10 minutes until beginning to brown

5. Meanwhile, drizzle salad leaves with juice from 1/4 of a lemon and a drizzle of oil. Toss and adjust balance according to taste
6. Scatter tortillas with cheese and sunflower seeds


7. Return to oven for 3-4 minutes until cheese is bubbling
8. Place tortillas on a plate, top with salad and tomatoes
9. Enjoy!

Its a Wrap Wednesday - Basic Salad Wrap


 Welcome to the first post in my new 'Its a Wrap Wednesday' series! Every Wednesday for the next two months, I will be sharing a recipe for a different way to fill a wrap for your lunch! I am not a big bread fan and wraps are the perfect alternative - they seem lighter and you taste more filling than wrap - plus they're fun to assemble!

The series begins with a basic salad wrap. Simple, fresh and versatile, this recipe can be adapted to suit your tastes/contents of your fridge!


 Basic Salad Wrap
Ingredients

1 Wrap
1/2 tablespoon mayonnaise
1 handful of your favourite salad leaves
25g grated cheese
3 tomatoes, halved

1. Spread mayonnaise over wrap
2. Top with leaves and tomatoes and then sprinkle with cheese
3. Wrap and enjoy!

Its that simple!


In the next few weeks, I will be building on this basic recipe, suggesting tasty different ideas so you can really vary your lunch!
