Harry Potter and the Chamber of Secrets - Butterbeer Muffins Recipe

Harry Potter Movies continue :) After LOVING the first film I was more apprehensive about the second as I remembered it as my least favourite but I thoroughly enjoyed it!

Week Two - Butterbeer Muffins

Inspired by this recipe on The Pastry Affair (adapted mainly due to fact several ingredients were unavailable in UK)
Makes 3 Cupcakes

2/6 cups plain flour
1/2 teaspoons baking powder
1/6 teaspoon baking soda
1/6 cup  unsalted butter, softened
1/3 cup dark brown sugar, packed
1 large eggs
2/3 teaspoons vanilla extract
1/6 cup buttermilk
1/6 cup cream soda





1. Beat butter and sugar
2. Add egg then vanilla extract
3. In a separate bowl mix Flour, baking powder and baking soda
4. Add 1/3 of flour mixture to liquid ingredients, then buttermilk, then 1/3 of flour mixture, then cream soda, then final 1/3 of flour mixture
5.Fill muffins cases with mixture
6. Bake at 175C for 10-15 minutes until skewer comes out clean
7. Cool on a wire rack
8. Make butterbeer butter cream icing
  • 70g butter , softened
  • 100g icing sugar , sifted
  • Good squirt of toffee sauce (ice cream sauce works well)
7. Pipe butter cream onto cake
8. Drizzle with toffee sauce
9. ENJOY!
