Harry Potter and the Prisoner of Azkaban - Snitch Cake Pops

Week Three - Snitch Pops

Inspired by these on Diamonds for Dessert, the third Harry Potter treat was cake pops shaped like Golden Snitches.

Makes 6

1. Make 1/4 batch of this standard cake mixture. Use...

  • 50g caster sugar
  • 50g softened butter
  • 1 egg , beaten
  • 50g self-raising flour
  • 1/4 tsp baking powder
  •  1/2tbsp milk
Put batter into muffin tins and cook for 10 minutes at 170C (or until skewer comes out clean)

2. Make buttercream
  • 50g butter , softened
  • 70g icing sugar , sifted
  • drop vanilla extract (optional)
3. Using food processor, blend cake to crumbs
4. Adding a spoon of buttercream at a time, mix until mixture sticks together
5. Shape the mixture into 6 ball shapes and chill
6. Coat the balls with the remaining buttercream and chill
7. Meanwhile, melt 70g of white chocolate. Draw 12 wing shapes onto some greaseproof paper and then using a spoon and toothpick, make white chocolate wings on the paper. Chill
8. Using a little extra buttercream attach two wings to the back of each cake
9. Insert a skewer/lollipop stick into the cake
10. ENJOY!
