Ice cream really is the best medicine...


When I was ill once, a friend told me that ice cream would make me feel better! I have embraced this philosophy fully ever since and fully beleive a tub of Ben and Jerry's is just the ticket for when you are feeling down and in need of a pick me up!
Yesterday I made the mother of all ice cream sundaes and I thought I'd share the recipe in case you are in need of an amazingly indulgent ice cream overload to brighten your day!
This sundae is based on the Ben and Jerry's core sundae. For extra fun I made a Ben and Jerry's flag and label for the ramekin to make my sundae look even more like the real deal!


Ingredients
makes 4

2 x tubs of Ben and Jerry's ice cream ( I used Cookie Dough and Phish Food)
Dark chocolate/white chocolate
1 quantity of hot fudge sauce...
  • 1/2 cup milk
  • 3 tsp butter
  • 1/2 tsp Vanilla extract
  • 1/2 cup sugar
  • 1/6 cup cocoa powder
  • 1 tablespoon plain flour


1. A few hours before serving, get your ice cream out of the freezer until its soft enough to scoop very easily. Spoon the first flavour into a ramekin, pressing it up against one side, repeat with second flavour, pressing up against opposite side. Place the handle end of a thick wooden spoon/spatula in the middle and fill around with ice cream - build the ice cream up as high as you like. Remove the spoon and you should have a hole right down the middle of the ice cream. Put ice cream back in freezer. Repeat with other 3 ramekins.

2. Melt white chocolate and then dark chocolate. Using a mould, make chocolate animals for topping (At Ben and Jerry's scoop shops they offer you white chocolate polar bears or dark chocolate fish - I have a bunny rabbit mould so I made bunny rabbit chocolates for topping




3. Hot Fudge Sauce

Fudge Sauce
1/2 cup milk
3 tsp butter
1/2 tsp Vanilla extract
1/2 cup sugar
1/6 cup cocoa powder
1 tablespoon plain flour

Add milk, butter and vanilla to a pan and heat gently until butter melted.
Meanwhile, combine cocoa powder, flour and sugar.
Add dry ingredients to pan and whisk constantly for about 3-4 minutes until sauce is thick.
Remove from pan to cool.

4. Assembly - reheat fudge sauce for 25 seconds in microwave. Pour into the hole you formed down the middle of your ice cream. Scatter with chocolate animals.

5. Enjoy!

The heat of the fudge sauce softens the ice cream enough to eat straight from the freezer and the cold from the ice cream thickens the fudge sauce! Perfect enjoyed with a film and good company - we watched Good Will Hunting - and really enjoyed it!
