Sweet Potato Burgers and Home Made Fries


This week's new recipe is the delicious sweet potato burger from How Sweet It Is This yummy vegetarian burger is flavoursome and very fresh tasting! Perfect with homemade fries (recipe below). I really enjoyed making it and am very pleased that I have a second burger in the fridge to have tomorrow!

Speed - **** (burger took as long as fries took to cook)

 Sweet Potato Burger
adapted from How Sweet It Is
serves 2
1 cup mashed sweet potato
1/2 cup cannellini beans
1 garlic clove, finely chopped
1/6 cup breadcrumbs
1/6 cup plain flour
1/2 tsp paprika
Pepper to taste
1/16 tsp cumin
1/2 avocado
2 Wholemeal rolls

1. Pierce potato with a fork and microwave for 10 minutes, turning half way through. Remove, and cool before scooping out the flesh
2. Mash beans coarsely with a fork. Add sweet potato and mash together
3. Add spices, flour, breadcrumbs, garlic and pepper
4. Mix together, chill for 15 minutes
5. Form into two equal patties (you will need to flour your hand in order to do this!) and place in hot oiled pan
6. Do not move until fully cooked and golden on one side (4-5 minutes). Flip gently and cook for a further 4-5 minutes
7. Serve in toasted rolls, topped with sliced avocado


Baked Fries
serves2
1/2 tbsp vegetable oil
1 tsp polenta 
1/4 tsp paprika
1/8 tsp garlic powder or 1/2 clove garlic grated
1 large potato , cut into 1cm-thick chips
1. Brush baking tray with oil and put in oven at 180C for 3 minutes
2. Meanwhile, mix together polenta, paprika and garlic
3. Toss potatoes through polenta mix and then lay out on baking tray. Shake to coat
4. Cook for 30-40 minutes until browned and crispy
5. Serve with burger
