Egyptian Kushari




I am returning home next week so wanted a recipe that would use ingredients I already had in the cupboard. This dish is perfect for this purpose and although simple, it is yummy! It could easily be bulked up with chicken or lamb for a fuller meal but I enjoyed it as it was.

Egyptian Kushari

serves 1
1/4 cup Rice
1/4 cup Pasta
1/4 cup lentils
1/2 onion, finely chopped
1 small clove of garlic, finely chopped
1/2 tun chopped tomatoes
1/8 tsp cinnamon
1/4 tsp cumin
1/2 onion, thinly sliced

1. Cook rice, pasta and lentils in separate pans in boiling water as per cooking instructions
2. Fry onion and garlic for 5 minutes
3. Add tomatoes and spices. Simmer until the pasta/lentils/rice are cooked
4. Fry the thinly sliced onion in a little oil until browned and slightly crispy (5-7 minutes)
5. Mix together pasta, rice and lentils. Season and put in a bowl. Pour over tomato sauce and top with onions
6. Enjoy!
