American Burgers

I know this is very stereotypical choosing to cook burgers for my American week but I will cook recipes from other parts of American I promise! Today was about 20C and it was the perfect day for a BBQ so burgers it was - delicious beef burgers with all the trimmings :) Perfect enjoyed al fresco on the patio with mum and dad (I am back in Cheltenham for the Easter hols now!)

This recipe is delicious and easy - perfect for a summery day like today! It is adapted from the Burgers and Sliders in Jamie Oliver's America cookbook.

Serves 3

1 red onion, finely chopped (as fine as you can get it!)
3 Cream crackers, bashed with a rolling pin until fine crumbs
250g lean minced beef
1 egg, beaten (you'll only need half - I had some egg whites in the fridge so used a drop of that to bind the ingredients together!)
20g grated Parmesan

3 Ciabatta rolls
2 large tomatoes, sliced
6 small gherkins, sliced
Handful of your favourite leaves - we used rocket and spinach
Tomato Ketchup or mayonnaise (whichever you prefer)

1. Fry the onion in a little oil for 10 minutes until softened, transfer to a plate to cool
2. Combine all of burger ingredients, you'll need to use your hand to scrunch them up
3. Form 3 burgers, mine were about 120g each
4. Put in fridge for about an hour
5. Heat BBQ and cook for about 20 minutes until cooked through and nicely browned, turning occasionally
6. Add the rolls to the BBQ for the last few minutes to warm though, butter and serve with burgers
7. Let people build their own burgers using the tomatoes, leaves, gherkins and sauce

BBQ Vegetables

1 red pepper
1 yellow pepper
2 small sweet potatoes
dash paprika

1. Finely chop the peppers into thin slices
2. Lightly butter a piece of foil, add the pepper and wrap up like a parcel
3. Peel and chop the sweet potato into chip sized pieces, sprinkle with a little paprika
4. Wrap sweet potato up in similar parcel to peppers
5. Place parcels on BBQ for as long as burgers take to cook, turn at least once during cooking
6. Enjoy with the burgers!

Hope you are enjoying this beautiful weather
